A warming delicious bowl of soup is what we need on days like this - here is one of my favourites:-
Take some chicken thighs (skin on as it adds to the flavour), in a pan add water, red chilli, lots of fresh sliced ginger, a fresh stalk of lemongrass, salt and poach the chicken thighs in it. When they are cooked remove the thighs and keep warm. Shred some carrots, spring onion, mushrooms, cabbage or whatever takes your fancy. Strain the chicken stock into a clean pan and add veg, simmer until cooked. Add some soy sauce, season, shred the chicken meat, removing the skins at this stage and enjoy a large bowl! Can add cooked thin egg noodles for a more filling soup!
